Welcome to my new blog series, where I walk through the minefield that is Pinterest "Recipes". Believe me when I say, I have had way more Pinterest fails than successes. Brownie S'mores, did anyone try that one? Epic fail. So every couple of weeks I'm linking the ones that DO work. Tried and tested by a person (me) who absolutely NEEDS a recipe to be simple.
So first up are these little potato stacks. I mean, you need to smell my kitchen right now. It's garlicky, buttery, salty goodness. These are easy peasy lemon squeezy (does anyone else say that in an Austin Powers' voice?).
I'm serving them tonight with juicy steaks, cherry tomatoes, grilled (ok then, I fried them) with olive oil and sea salt and topped with a poached egg because I would literally eat a poached egg with every meal.
You can find the recipe here but I made a couple of changes. I didn't use a muffin tray or any of that jazz, I simply sliced the potatoes and par boiled them for 7 minutes. Then drained them and started stacking, spooning the buttery mixture over every two or so slices. When they're all stacked, drizzle the remainder of it over them and sprinkle a little more sea salt and thyme. Then pop them in the oven at 180ΒΊ for about 25 minutes (or until they start looking crispy around the edges. Voila!!!
(Oh and it says to use 1 garlic clove, I used about 6. I'm stinkin' tonight)
